There actually was no opening, but I got in contact with the dietitian and sought out interning experience with her. We spoke over the phone and met in person about projects she was interested in me completing.

The interview was on zoom and it was relatively straight forward. Come prepared with questions to ask them and also have answers prepared for their questions. They were very professional and overall, were very kind.
