The answer "be honest" has some qualifications. Remember that there are some aspects to this job that cannot be avoided. If you identify one of those as a weakness you won't get hired. Examples: paperwork or "people person"- both are crucial to the role but if you say you don't like them or are not strong in them, you are SUNK. Better advice: Pick something mundane and innocuous.
